This Coffee's Story

The super-sized pacamara varietal is well-known for dominating many a Cup of Excellence competition in El Salvador due to its outstanding potential for achieving exceptional cup quality when grown at high altitude. The only caveat being that crops can yield less fruit and are generally more susceptible to disease and pests. Upon tasting Maria’s then honey-processed pacamara back in 2019, our host from Caravela informed us that her past lots had reached scores of up to a tongue tingling 90 however the quality of the green coffee was inconsistent and unfortunately marked down accordingly.

Finca Margarita has since been the focus of North Star’s first funded infrastructure project alongside our friends and export partners Caravela. We are now into the third year of said project and in addition to the raised beds built in phase 1, Maria’s farm is now home to a new de-pulper and improved fermentation tanks which are helping to transform processing operations on the farm with respect to both yield and quality. Step forward this year's pacamara harvest which is edible proof of the impact the project is having.

We are beyond excited to welcome back this extra special washed micro lot for a third year. Expect a bright and juicy flavour profile with a delicate floral hit, creamy body and sweet stone fruit notes. It’s a fruit forward, bold and characterful delight that is definitely not one to be missed. There’s limited availability of this stunner so grab a bag whilst you can!

This Coffee's Origin

Our first North Star funded project designed to support Maria Zoila Piñeda - the producer behind Finca Margarita. With the help of export partners Caravela and Maria herself, we created a 3-stage infrastructure improvement project designed to bring about lot separation, better quality and consistency, efficient use of labour, lower emissions and ultimately, greater access to more income.

Brilliantly fruity & uplifting!!!

As always, I read what's on the bag after tasting it. I read Peach ( it is UNDENIABLY there), Mango ( I disagreed... not that sweet... a sharper fruit?) & Rose ( I'd NOT spotted it, but subsequently picked it up in after-taste). However, the description on the shop-site WAS a better description. Scrub the Mango, it was definitely CHERRY in there!!!
The combination of sharpish peaches & red cherries really does make this a really uplifting brew with plenty of zinginess & a really positive fruitiness!!!
A BRILLIANT coffee when you need a 'lift'!!! Currently my 'Early-2023' favourite coffee & one I'll be purchasing again & again as long as it's available.
